Elaine’s Chocolate Chip Peanut Butter Cookies
Cream together:
½ cup organic butter (1 stick)
¾ cup raw sugar (preferably the fine ground)
1 egg or equivalent
1 tsp vanilla
½ cup organic crunchy peanut butter
½ cup organic butter (1 stick)
¾ cup raw sugar (preferably the fine ground)
1 egg or equivalent
1 tsp vanilla
½ cup organic crunchy peanut butter
Add and stir:
1¼ cup spelt flour
¼ tsp baking soda
¼ tsp real salt
Add 1 cup semi sweet chocolate or carob chips of choice
1 cup of chopped organic peanuts
Mix well and bake on un-greased cookie sheet about 12 minutes at 375 on a top oven rack or 350 on a lower rack. Remove from oven when center is still soft and edges are browned. Cool on wire racks. Makes about 2 dozen average size cookies.
