Elaine’s Fresh Apple Muffins
In a large bowl combine:
4 cups chunky applesauce
2 cups light brown or turbinado sugar
2 eggs beaten
2 Tablespoons vanilla
1 1/2 cups chopped walnuts

Sift together and add to above mixture:
2 cups spelt flour
2 teaspoons baking powder
2 Tablespoons cinnamon
½ teaspoon sea salt
Bake at 350 degrees in 2 dozen lined muffin tins for about 20 minutes or until a toothpick comes out clean when piercing center of a muffin.
